Ingredients

Cake Batter

  • 2 cups flour
  • 1 teaspoon baking powder
  • 2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 teaspoon baking soda
  • 2 cups sugar
  • 2 cups pumpkin
  • 4 eggs
  • 1 cup oil ( I use olive oil or avocado)

Frosting

  • 3 ounces cream cheese
  • 1 teaspoon vanilla
  • 1 tablespoon milk
  • 1 3/4 cup powdered sugar
  • 3/4 cup butter (softened)

Instructions

  1. Preheat oven at 350.
  2. Mix together all dry ingredients, then set aside.
  3. Mix wet ingredients and slowly add in dry ingredients until blended together.
  4. Pour batter in a greased jelly roll pan and bake for 25 minutes.
  5. Place cream cheese and butter in a mixing box, blend until smooth, add in remaining ingredients.
  6. Remove cake from oven, let cool before frosting.

Notes

  • Store in refrigerator
