Ingredients

- 6–7 medium sized potatoes
- 3–4 tablespoons of olive oil
- 21 seasoning from trader Joes (If you can’t get this is still tastes amazing without it!)
- 1 cup shredded cheese
- 1 teaspoon fresh chopped chives
- 1/2 cup sour cream
- Salt & pepper
- Garlic powder
Instructions
- Wash and cut potatoes into thirds leaving the skin on.
- Place into a pot of boiling water and cook for 15-20 minutes until soft.
- While potatoes are cooking place cook sheet or cast iron skillet drizzled with olive oil in oven to get hot.
- Once potatoes are soft enough to put a fork through, drain water off in strainer.
- Place potatoes on pan, they should sizzle, smash with a coffee cup until they are flat. (Helpful tip: I spray the bottom of the cup with cooking spray to keep it from sticking to cup.)
- Once all the potatoes are smashed drizzle with the olive oil and season with salt, pepper, garlic powder and A21 seasoning. Bake in a 400 degree oven for 30 minutes until potatoes are soft with crispy edges.
- Spirnkle with cheese and let melt in the oven for a few minutes.
- Add chives on top and serve with sour cream on the side.
