How to build a Mexican Charcuterie board that will be a hit with all your guests!

Do you love the idea of a charcuterie board as much as I do? There is something so beautiful about loads of delicious and colorful ingredients placed on a board for everyone to dig in and enjoy. It brings a sense of togetherness as we all stand around eating from the board created.  It is an easy clean up when you are done and serves as a beautiful work of art which becomes the focal point of the meal.
Daydreaming about how I can do something new and creative with food is one of my favorite things to do. Using the colors of food on a board to design a masterpiece to enjoy is so exciting and easy to do. A great way to feed a group of friends is to create a “Charcuterie Meal” like the Mexican charcuterie board.
It is good to have elements that are different textures and colors. This is what creates the elements of fun on the board.  The options are limitless and easy to build something that will wow your guests.

Suggested Ingredient List:

  • Purple cabbage

  • Spring onions

  • Fresh Cilantro

  • Black olives

  • Tomatoes

  • Romaine lettuce or any dark leave lettuce like arugula or spinach

  • Shredded cheese

  • Limes

  • Fresh sliced Jalapeños

  • Queso cheese dip

  • Salsa

  • Black or refried beans

  • Tortilla chips
  • Shells (whichever kind you prefer – I use both corn and flour)
  • Ground beef or shredded chicken

How to Build Your Board:

1.Choose bowls for your sauces/wet ingredients such as salsa, guacamole and queso dip and black beans.  Place them spread throughout the board so you can arrange your dry ingredients around them.
2. Place bulky items next such as lettuce, cabbage and cheese. Make sure different colors and textures are next to each other.
3. Place smaller items such as olives, tomatoes, jalepeno's.  I recommend making sure you have drained any extra liquid before placing the items to eliminate any juice running into your board.
4.  Fill in empty spots with tortilla chips and shells.  If you are short on space, you can roll shells up and stack them to help save space.
Don't over think it, it is as simple as piling it on until you have filled the whole board up with awesomeness!
This board can make a nacho bar, taco salad bar or whatever you want it to be!  It is about creating a place where everyone can gather around, eat and enjoy the company of one another.
