Taking advantage of extra time at home and cooking more things from scratch! This pita bread recipe is one I have used for years. It is not complicated to make, it only uses 5 ingredients but what you do need is a little time!  Once you have made the dough you need to let it rise for a couple of hours.  The whole process from start to finish takes about 3 1/2 hours so you will need to plan ahead in order to get these done for dinner.

They are soft in the middle with a nice crispy edge.  A perfect match for my homemade hummus recipe.  You can even use them to make mini pizza’s with (This is my son’s idea and a weekly lunch option for him!) Sometimes I make a double batch and throw some in the freezer to pull out when I need them.

Once you have mixed the warm water, sugar and yeast together you will need to let it rest for five minutes.  The yeast will start foaming on the surface and looks much like this.

After you have kneaded the dough oil the bowl before placing the dough back inside.  This keeps it from sticking to the sides.  Cover the top of the bowl with a clean tea towel and leave it to sit for 2 hours.  It will double in size by the time it is finished rising.

Once your dough has risen you will need to punch it down.  Take the dough out of the bowl and place it on a floured surface where you can divide it into 8 equal pieces.

Roll each dough portion into a ball and place on a floured cookie sheet. Cover the dough balls with a greased piece of cling film so that they won’t stick to it.  You will need to let this rise for another 30 minutes.

Roll Each ball out with a rolling pin and let rest for an additional 10-20 minutes.  You will cook these in a greased medium temp skillet for 3-4 minutes per side.  Serve hot!  If you are making them in advance you can pop them in the toaster or oven to warm up before you serve.  If you are not going to be eating them immediately I would slightly undercook them at 2-3 minutes per side.

Ingredients

1 Cup warm Water

2 1/2 Teaspoons of Rapid Yeast

1 Tablespoon sugar

1 Tablespoon Olive Oil

1/2 Teaspoon salt

3 Cups of All Purpose Flour


Instructions

  1. Mix together your warm water, yeast and sugar. Let stand for 5 minutes. The yeast should be foamy on the surface.
  2. Add in olive oil, salt and 2 cups of flour.  Mix until blended well, then slowly add in the remaining cup of flour. It should start to pull away from the edges and be less sticky.  If it is not doing this add another tablespoon of flour.
  3. Remove from bowl and knead on a floured surface for 5-6 minutes.
  4.  Brush Olive oil around your bowl and place dough back in the bowl.  Cover with a clean tea towel and leave to sit for 2 hours.
  5. Punch down the dough and move to a floured surface.  Cut into 8 equal pieces and roll into balls.  Place them on a floured cooked sheet.
  6. Cover with a piece of greased cling film and let rise for an additional 30 minutes.
  7. Roll out each ball onto a floured surface until it is about 1/4 inch thick.  Let rest for 10-20 minutes.
  8. Cook in a greased skillet on medium heat for 3-4 minutes per side.
  9. Serve and Enjoy!
